As you go to lunch, more flavorful foods come into play. Litti Chokha is a delicious wheat flour cake that is baked and then salted, as well as being filled with delicious crushed chickpea flour. It is also not very hot, so those with a weak palate can enjoy it in complete peace. But if you like heat, try some Kahdi, from Jammu. This spicy dish is a gravy made from chickpea flour, with red-hot vegetarian pancakes called pakoras. To wash it all down, have a divine tea or coffee if you're that kind of person.
