More information on the introductionThe Mediterranean basin has always been known for its climatic and soil parameters suitable for olive trees. Therefore, it is precisely in this region that the greatest production of olive oil is concentrated. In recent decades, Spain has been the world's leading producer and exporter of olive oil and table olives, with over 300 million olive trees on its lands (country profile-IOC, 2013). Most of the production is concentrated in the Andalusia area. The olive oil produced in Spain is destined for both the domestic and foreign markets. With an average production of over 1 million tons of olive oil per year, from 2007 to 2013, the country exports over 150 thousand tons per year (World Olive Oil Figures-IOC, 2013). The main export destinations in the European Union are Italy, France, Portugal, the United Kingdom, Belgium, the Netherlands and Germany.
